魔芋膳食纤维固体饮料中优势菌的分离、初步鉴定及菌相分析

Isolation, Identification and Microflora Compositions of Konjac Dietary Fiber Solid Drinks

摘要: 对魔芋膳食纤维固体饮料中的微生物进行分离及初步鉴定, 同时对饮料生产环境背景菌进行调查, 以此确定魔芋膳食纤维固体饮料中的优势菌, 并对菌相成因进行分析。结果表明, 6个批次样品共分离得到32株菌, 其中革兰氏阳性芽孢短杆菌27株, 革兰氏阳性芽孢长杆菌2株, 革兰氏阴性长杆菌1株, 霉菌2株。6个批次样品均未分离得到肠杆菌、葡萄球菌及乳酸菌。背景菌调查发现, 饮料生产环境空气中共分离得到200株菌, 其中103株为芽孢杆菌。从干燥车间接触表面分离得到9株菌, 全部为芽孢杆菌。表明芽孢菌为魔芋膳食纤维固体饮料产品菌相优势菌, 与其生产工艺及生产环境存在一定的关联性。

Abstract: To ascertain dominant microorganisms in konjac dietary fiber solid drinks, and analysis the reason for the bacteria existence, the bacteria in the product as well as in the production environment were isolated and identified. The results showed that 32 strains of bacteria were found in six batches of samples, including 27 strains gram positive bacillus, 2 strains of gram positive long coli bacillus, 2 strains of moulds, 1 strain of gram-negative bacillus, no enterobacteriaceae, lactic acid bacteria and staphylococcus. Through the investigation of background bacteria in the production environment, 200 strains of microorganisms were isolated from the atmosphere, including 103 strains bacillus. Among them, 9 bacillus were isolated from the contact surface of drying workshop. Results indicated that bacillus was the dominant microorganisms of konjac dietary fiber solid drinks. There is a certain correlation with the production process and the production environment.
